Make ready 500 g Mushroom
Take 1 capsicum(cut into cube size)
Get 1/2 onion (cut into cube size)
Make ready Whole spices (1 cinnamon stick,3 cloves,2 bay leaves)
Make ready 2 tbsp oil
Make ready 1 tbsp butter
Take 2-3 tbsp curd or heavy cream

Get 1 big onion

Prepare 1 tomato
Get 1 inch ginger
Take 4 garlic cloves
Take 2 green chili
Prepare For the Kadai Masala Powder
Make ready 1 tsp Coriander seeds
Get 1 tsp cumin seeds
Prepare 3 red chilli
Prepare 1/4 tsp pepper
Get 1 clove, 1 cinnamon
Take 1 bay leaf
Instructions
Steps to make Kadai Mushroom gravy:
Wash and clean the mushrooms nicely and pat dry with paper towel/cloth.
Dry roast all kadai masala ingredients and grind to fine powder and set aside.
Then slice the mushrooms and keep aside. Cut all other veggies and keep it ready.
In a pan, add 1 tbsp oil,sliced onion,tomato,ginger, garlic,green chili and saute until it turns mushy. Keep it aside to cool down completely.
In the same pan, add 1 tbsp oil and saute few cubed onions,capsicum for 1 min and set aside. Then add sliced mushroom and saute for 2 mins and set aside.
Add few cashews into the previously sauteed onion tomato mixture and grind to smooth paste.
In a kadai, add 1 tbsp oil,butter,whole spices and let it splutter. Then add the ground paste and saute for 2 mins.
Add salt,chili, turmeric,coriander powder, 1 tbsp kadai masala and mix well. Then add the sauteed mushrooms, heavy cream or thick curd(beat the curd well before adding),little water to adjust consistency and cook for 5 mins.
Add the sauteed onion and capsicum, kasuri methi or dry mint leaves and mix well.
Now the most delicious, spicy kadai mushroom is ready. It can be served with Chapathi,Naan Parota, Jeera rice.
