Get 1/2 tsp salt

Make ready 1/3 cup chopped onion
Get 1 cup chopped tomatoes

Get 1/2 tsp lemon juice
Get 1 tsp Mustard oil

These stuffed balls are known as Litties are usually roasted over. Litti, along with chokha, is a complete meal originated from the Indian state of Bihar. It is also popular in Jharkhand and parts of Eastern Uttar Pradesh. It is a dough ball made up of whole wheat flour and stuffed with gram flour.
Instructions
Steps to make Litti chokha:
For Litti dough- In a mixing bowl, take 2 cups whole wheat flour/atta (240 grams) and 1/4 teaspoon salt, 1 Tsp crushed ajwain. Also add 1 tablespoon ghee or oil.
Now add water in parts and knead to a smooth soft dough. I added 3/4 cup water. Depending on the quality of flour, you can add 3/4 to 1 cup water.
Knead till smooth and soft. Cover the dough and keep aside.
Litti stuffing-Take 1 cup sattu/roasted gram flour in a mixing bowl or pan.
Now take 1/2 teaspoon heeng, 1/2 teaspoon jeera, 1 to 2 teaspoons chopped green chilies, 1 teaspoon finely chopped ginger, 1 teaspoon finely chopped garlic, 2 tablespoons chopped coriander leaves and 1/4 teaspoon black salt, 1 tsp chat masala Also add regular salt as per taste and grind them to make a powder
Combine everything well, and Sprinkle 1 to 2 tablespoons water all over and mix the flour with water evenly. Do add more water if required. The sattu stuffing mixture should not be too dry or too wet. If the mixture is dry.
Stuffing & shaping litti- - - After 30 minutes, now make small or medium sized balls from the dough. - Place 2 to 3 tablespoons of the stuffing in the center,Pleat and then join the edges. Press the joined part and lightly roll the stuffed dough balls in your palms, so as to get a round shape. Keep aside.
Prepare all stuffed littis this way and place them on a baking tray, which has been greased with some oil. Do grease baking tray or grill well, otherwise the littis can stuck to the tray.
If you're using grill you don't need to flip littis,but if you're using tray flip littlis accordingly.
Brush some melted ghee all over or place it into a bowl full of ghee, and then transfer to a serving tray.
Baigan bharta chokha- Rinse 1 large baingan in water. Place it on a grill on a stove top or you can place it directly on fire.
Roast the baingan till it's completely cooked and tender. With a knife check the doneness.
Remove the baingan and immerse in a bowl of water till it cools down.
Add the chopped baingan in a mixing bowl.
Then add ⅓ cup chopped onions, 1cup chopped tomatoes, ½ teaspoon chopped green chilies, ½ teaspoon chopped garlic and 1 to 2 tbsp chopped coriander leaves.
Add 1 teaspoon mustard oil. If you want, you can add ¼ to ½ teaspoon lemon juice for a slight tang. Season with salt.
Mix everything very well, or you can cook them in a pan for about 5 min if you don't like the raw bharta, bharta is ready sprinkle some coriander leaves and serve.
