- Put about 3 tblspn of veg. oil into a pot, place over a medium heat, add onions and stir fry until onion is pale.
- Add tomatoes, scotch bonnet, red pepper and green pepper, fry for a few minutes.
- Add spices and seasonings, stir them well, then add a bit of water to loosen it up.
- Finally add the fried Gizzard and the fried plantain, stir together thoroughly, leave it to simmer for about 5mins. Serve and enjoy.
