    Gizdodo is an increasingly popular dish in Nigerian homes and parties. If you haven't cottoned on to the Gizdodo buzz or are yet to try it out, then you really are missing out! Gizdodo - Aromatic Stewed chicken gizzard and plantains infused with herbs, bell-peppers -easily replace with chicken thighs. Growing up in Africa, we ate every part of the chicken except the bones.


    Instructions

    Steps to make Gizdodo:

    1. Wash and cook your gizzard with salt.
    2. Slice your gizzard and set aside. Cut your ripe plantain to take almost the same shape as your gizzard. Fry your plantain and gizzard.
    3. In another pot, put a little oil, add your onions, garlic and ginger and fry a little.
    4. Add your tomatoes and pepper and fry. Some people preferred blending the pepper, tomatoes and tatashe and then boil to reduce the water before frying. Which ever method is okay, but I prefer dicing the tomatoes and pepper and then fry it.
    5. Once your tomatoes is properly fried, add a little water and spice with stock cube, a pinch of salt, thyme, rosemary, oregano and black pepper.
    6. Add the fried plantain and gizzard and allow it to simmer for some minutes.
    7. Add your veggies that is green pepper, tatashe and cabbage. Stir and turn off the light

    Gizdodo is a traditional Nigerian dish consisting of chicken gizzards and plantains (dodo), hence the name.
