    1. Peel and slice plantain into round shapes,Season with salt and fry until golden brown then drain from oil and keep aside.
    2. Add a tablespoon of oil to a small pan,fry onion,garlic until golden brown.Add sausages,carots then allow to fry for two minutes on low heat.Finally add bell peppers,spices,1 seasoning cube and salt to taste
    3. Break eggs in a bowl,whisk then add the fried veggies to it.Add the remaining seasoning cube and mix well.
    4. Get a greased pan/frying pan then add egg&veggie mixture to it. Arrange the fried plantain on top of the mixture. Bake in a 180degree preheated oven for 15minutes..Or alternatively use a frying pan,with a lid and fry for 20minutes on low heat
