    Instructions to make Egg Quesadillas:

    1. To prepare the eggs - 1. Heat a table spoon of ghee in a pan; add the onions, tomatoes and bell peppers. - 2. Sauté for 2-3 minutes till vegetables are tender yet crisp. - 3. Add the salt and black pepper; mix well. - 4. Lower the heat, add the eggs and whisk them nicely. - 5. Cook the eggs till they are done yet not dry. Remove from heat.
    2. To prepare the quesadillas - 1. Spread ½ table spoon of butter/ ghee on a griddle/ tawa and heat. - 2. Place a tortilla/ chapatti on the griddle. Now add the prepared eggs. Add some grated cheese on the top. Cover with the other tortilla. - 3. Spread the remaining ½ table spoon of butter on the tortilla. - 4. Grill on both the sides on medium heat till nice and crisp. - 5. Remove on a clean platter, cut into slices using a pizza cutter. - 6. Garnish with green coriander.
