    Ingredients

    The ingredients needed to make Lauki ka halwa:

    1. Get 500 grams lauki
    2. Prepare 1 cup milk
    3. Make ready 50 grams khoya
    4. Prepare 1/3-1/2 cup sugar or as per taste
    5. Prepare 1/2 teaspoon elaichi powder
    6. Take 5-6 almonds sliced
    7. Take 15-17 raisins
    8. Make ready 5-6 cashewnuts
    9. Take 5-6 pistachios sliced
    10. Prepare 2-3 tablespoon ghee
    11. Prepare 2 pinch green colour(optional)

    Instructions to make Lauki ka halwa:

    1. Take a kadhai add ghee,heat well, then add almonds, pistachios, cashewnuts and raisins. Roast it and stir continuously till it changes its color.Switch off the heat and Keep aside mixed nuts
    2. Wash and rinse well lauki.Peel the skin of lauki.Cut the lauki into 2 or 3 parts,so that it becomes easier to grate.Now grate the lauki.Dont grate seed part of lauki.
    3. In the same kadhai, as there is already ghee in it,heat it well, then add grated lauki. Roast it for 6 to 8 minutes on medium heat. Stir continuously.
    4. Now add milk.stir and mix. Let it cook on medium to high heat.
    5. Milk will start reducing and absorb. Once 75 to 80 percent of milk is absorbed add sugar.Mix it nicely.
    6. Then add khoya in the kadhai. Mix it well and keep on stirring continuously.
    7. Then add elaichi powder and mix well.
    8. Cook till the khoya and milk is completely absorbed mixed well with lauki
    9. Now add green colour in halwa and mix it well. This part is optional. I have added colour to enhance the colour of halwa.
    10. Add roasted mixed nuts(almonds, raisins, cashewnuts, pistachios).Keep few for garnishing while serving.
    11. Adjust sugar according to taste.
