    1. Make ready 1 cup leftover or cooked rice
    2. Take 2 medium sized Potatoes
    3. Prepare 1/2 teaspoon Garlic powder
    4. Prepare 1/2 teaspoon Chilli flakes
    5. Prepare 1 tablespoon chopped Coriander leaves
    6. Prepare 1 teaspoon black Sesame seeds
    7. Make ready to taste Salt
    8. Take 1 piece Butter paper/baking sheet
    9. Make ready 2 teaspoon cooking oil to grease the butter paper+hand+knife
    10. Take For Stuffing
    11. Make ready 1 cup red Lentil (masoor daal)
    12. Prepare 1 big chopped Onion
    13. Prepare 2 chopped green Chillies
    14. Take 2 tablespoon chopped Coriander leaves
    15. Prepare 1/2 teaspoon Kasuri methi
    16. Take 1/2 tsp Cumin powder
    17. Make ready 1/2 tsp Coriander powder
    18. Take 1/4 teaspoon Garam masala powder
    19. Make ready 1 tablespoon Cooing oil
    20. Take Salt as per taste

    Instructions

    Steps to make Veg Sushi with leftover rice:

    1. Pressure cook the daal until soft and mussy with little water and salt.
    2. Heat 1 tablespoon of oil in a pan and saute chopped onion and chopped green chillies for 2-3 minutes.
    3. When onions become light golden brown add the cooked dal.
    4. Stir well to mix in medium heat and add cumin powder, coriander powder, garam masala powder and salt (if needed).
    5. Stir well and add kasuri methi and coriander leaves.
    6. Mix nicely with spatula, add chopped capsicum and remove from heat.
    7. Mix well and keep the mixture to cool.
    8. Now for the outer layer, take 1 cup of leftover rice to a mixer grinder.
    9. Take 2 boiled potatoes, peel, chop roughly and add to the grinder.
    10. Grind until the mixture becomes a soft dough.
    11. Transfer to a mixing bowl.
    12. Add garlic powder,chilli flakes, little salt and coriander leaves.
    13. Mix well with your hand (grease hand with little oil)to well incorporate.
    14. Clean your hand, take a butter paper/baking paper and brush with little oil.
    15. Now put the rice mixture to the greased paper.
    16. Grease your hand again and spread the mixture to make a thin rectangular sheet.
    17. Take lentil mixture and place over the rice sheet.
    18. Spread with your fingers to make a thin layer. Leave some spaces on edges empty.
    19. Now with the help of the butter paper, very carefully start rolling from one side.
    20. Continue to roll taking help of the paper to make a log(grease your hand before rolling).
    21. Grease a knife and trim the sides of the sushi roll.
    22. Sprinkle some black sesame seeds on the top.
    23. Now with the greased knife slice the roll (1 inch thick).
    24. Place each slice on a serving plate and serve as snack.
