    1. Take 3 Carrot large - grated finely
    2. Prepare ½ litre Milk -
    3. Take 120 ml Ghee – fluid / ½ cups / 4 ounces
    4. Take 3 Cashews Almonds Pista , , Raisans , - tblspn chopped (I used Badam)
    5. Get ½ cup Sugar - / 100 gms (or to taste)
    6. Prepare 4 Cardamom / Yelakai -
    7. Make ready pinch Saffron Orange or food colouring -a

    It is made by placing grated carrots in a pot containing a specific amount of water, milk and sugar and then cooking while stirring regularly.     Steps to make Carrot halwa:

    1. Heat half of the ghee in a kadai..Fry some badam pieces in this till golden and remove it..
    2. Now Add in grated carrot and fry for 5 mins..
    3. Pour in milk and bring that to boil..
    4. Simmer the flame and cover it with a lid..Let this cook for 20-30 mins until the carrot is cooked through and milk is evaporated.
    5. Now add in sugar and mix well..Throw in the cardamom too..
    6. Now add in a pinch of saffron yellow colour and mix well..
    7. Let this cook untill the halwa gets thickened..It will take around 10-15 mins..
    8. Now add in remaining ghee and mix well..
    9. Add in the nuts and mix well..Cook this until the halwa leaves the sides of the pan..
    10. Switch off the flame and serve hot..
