    Ingredients

    The ingredients needed to make Medu Vada:

    1. Get 1 1/2 cup white urad dal
    2. Take 3-4 garlic cloves
    3. Take 1 inch ginger
    4. Get 2 green chilies
    5. Make ready to taste Salt and red chilli powder
    6. Make ready As needed Oil for deep frying vada
    7. Get For Sambhar
    8. Take 1 cup tuvar dal
    9. Take 1/2 cup tamrind water
    10. Prepare 1 onion chopped in slices
    11. Get 1 tsp turmeric powder
    12. Prepare 1 tbls sambhar masala
    13. Make ready 1 tsp red chilli powder
    14. Get 1 tsp mustard seeds
    15. Get 1 tsp ginger chopped
    16. Get 1/2 tsp asafoetida powder
    17. Get 2 dry whole red chilli
    18. Make ready 7/8 curry leaves
    19. Take to taste Salt
    20. Get 1 tsp oil for tempering

    Instructions

    Steps to make Medu Vada:

    1. Soak urad dal for 2 hours
    2. Grind in mixture jar with very little water if required 1 or 2 tbls
    3. Add ginger garlic and green chilli in it and grind to fine paste
    4. Take out in a bowl add salt red chilli powder and pinch sodabicarb mix well with fingers in fast motion so air incorporate into it
    5. In a pan add oil for deep frying let it come to hot
    6. Wet your hand take little portion of batter with the thump make whole and slide the vada into the hot oil do same way other vadas too
    7. Fry them on medium to low flame like pakodas turn and fry them till golden in colour
    8. Take out on a plate keep it aside
    9. For Sambhar in a pressure cooker add soaked dal water salt and turmeric powder give 3 whistle and lower the flame let it simmer for 10 minutes
    10. Than take it out from the flame
    11. In a tempering pan add oil add mustard seeds asafoetida powder curry leaves green chilli ginger finely chopped now add onion and saute it
    12. Add red chilli powder and sambhar masala pour this into the sambhar daal cooker stir well again put the cooker on the flame give a nice boli when oil comes add tamrind water or paste into it
    13. Serve sambhar vada with coconut chutney or only with sambhar
