    Mom made this for brunch and I happily captured the pics. We had medu vada with the sambar and coconut chutney. Medhu Vadai is one of the easiest snacks to make. the word medu in the medu vada, literally means soft in kannada language. basically this word is attached to this dish, to describe softness yet the crispiness it has. perhaps the udupi restaurants famous all over india had a great contribution in popularising and giving this adjective to vada recipe. Ulundu vadai is hubby favorite but I like paruppu vadai than this one.


    Instructions

    Steps to make Medu vada/ ulunthu vadai:

    1. Soak Urad dal and rice together for 2 to 3 hours. Now drain it and grind in a blender to a very smooth paste. Add little water as needed to make a smooth paste. Tranfer this to a mixing bowl and set aside.
    2. Now add onions, green chilli, ginger, curry leaves in this and mix well
    3. Take a small portion out of this and flatten it with your hands. Make a small hole in the center and drop in hot oil.
    4. Fry this till golden brown and drain in a paper towel.
    5. Serve hot with chutney and chai

    I wanted to try this since long seeing amma making it for years for any festive ocassions. The only problem I face with ulunthu vadai is the perfect round shaped vadas……I wanted to do justice to this post here, so the ones posted here. Usually Medu Vada's are served hot lovely puffed up in hotels. But at home usually the vadas are small to medium sized with and without holes. Medu Vadas are deep fried and there cannot be a compromised in this recipe, skinless ulunthu / urad dal is soaked and later ground into a fluffy batter.
