    1. Prepare 2 Cups Urad Dal / black gram

    6. Prepare 1/2 Teaspoon Salt

    Steps to make Medu vada:

    1. Wash and rinse the urad dal thoroughly. Soak it in water overnight or for at least 3-4 hours.
    2. Drain the water & grind the dal to a smooth paste in a grinder or food processor with a few drops of water, if needed. The batter should remain thick so it can hold it's shape.
    3. Transfer the batter to a mixing bowl and add finely chopped onion, green chillies and ginger along with curry leaves.
    4. Add a pinch of baking soda and salt to taste and mix all the ingredients together.
    5. Heat oil in a deep kadai or frying pan over medium flame. Wet your palm with water. Take medium lemon sized portion of batter on your palm, press it gently and make thick round
    6. Make a whole in the center using your thumb.
    7. When the oil is medium hot, slowly slide vada in it; add 3-4 vadas at a time. Flip and deep-fry both the sides until they turn light golden brown and crisp.
    8. Drain excess oil and transfer them over kitchen paper on a plate. Repeat the same process for remaining batter. Medu vada is ready to serve

    Allow vada to get medium golden brown on one side before flipping over to the other side.
