    The ingredients needed to make Medu Vada Urad Daal Vada:

    1. Make ready 1 cup urad dal (white split gram)
    2. Prepare 1/2 tsp cumin seeds
    3. Prepare 1 onion finely chopped
    4. Get 1 string fresh curry leaves chopped
    5. Prepare 1 green chilli chopped
    6. Get to taste Salt
    7. Take as needed Oil for deep frying

    Medu Vada or simply Vada are crispy fritters made with urad daal and enjoyed with sambar or chutney. They are usually served along side idli as part of a perfect South Indian breakfast, but don't let that stop you from enjoying these vadas for lunch or dinner. We often make this at home and if there is any special occasion in our house, then this is the one of which occupies the table. Everyone think that this is complicated , but I can tell you that it is so easy peasy.

    Steps to make Medu Vada Urad Daal Vada:

    1. Wash and soak the urad dal. Soak for 3 hrs. Strain the water through the strainer.
    2. Take a mixer grinder jar, add soaked dal and two tbsp water and grind to a smooth purée. Take purée out in a mixing bowl. Beat it well until light and fluffy with your hand.
    3. Add cumin seeds, Curry leaves, onion and salt. Mix well. Heat oil in a wok.keep water in a separate bowl. Wet your right hand palm. Make all the Vada with your wet hand.
    4. Take a ball size portion from wet hand roll it to a ball. Make a hole in centre with your thumb. Leave it in medium heated oil.
    5. Fry on low to medium flame from both the sides till golden brown. Take out on oil absorbing paper.
    6. And here you go…Serve with hot sambhar and coconut chutney, tomato chutney.

    The trick in this is you. Here vada refers to Uddina vada medu vada, a crispy, fluffy fritter tasting heavenly with chutney and udupi sambar. Drain all the water from soaked urad dal and grind it along with salt, green chilly in to smooth fluffy mixture. It is better to use wet grinder for grinding.
