    The ingredients needed to make Medu Vada:

    1. Prepare 1 cup Urad Dal
    2. Take 2 tsp Ginger minced
    3. Get 4 tbsp Rice flour
    4. Prepare 1 tsp Methi/fenugreek seeds soaked overnight
    5. Get 2 tsp Fresh Coriander leaves chopped
    6. Get to taste Salt
    7. Take As needed Oil
    8. Prepare Pinch Hing/ Asafoetida
    9. Make ready 1 tsp coriander powder
    10. Take 1/2 tsp Cumin Seeds/ Jeera
    11. Make ready 1 tsp Garam Masala
    12. Take 1/2 tsp red chilli powder
    13. Prepare 1/2 tsp black pepper powder
    14. Prepare 2 Green Chillies
    15. Take as needed Water
    16. Prepare 2 tsp Fresh Curry leaves chopped

    Medu vada or vadai is a traditional favourite of South India that features not just in everyday cuisine. Medu vada is one of those unforgettable Southern Indian meals. It is served with steaming hot Sambar and fresh coconut chutney in some places. Medu vadas are uncomplicated to make.

    Steps to make Medu Vada:

    1. Soak Urad Dal for 4 to 5 hours or overnight and later drain the water. Now add the soaked urad dal & fenugreek seeds in a grinder. Add water as required. Make sure that the batter shouldn't be very thin. Grind them to smooth batter.
    2. Transfer the batter in a large bowl. Then add chopped curry leaves, coriander leaves, ginger, green chillies, cumin seeds, black pepper powder and red chilli powder, salt (as required) to the batter. Mix well.
    3. Now take a small bowl of water and apply some water from the bowl on your both hands. Take some batter in your hand from the bowl. Give it a round shape and with your thumb make a hole in the center. Or you can make on a plastic sheet or banana leaves also, but first you have to apply some oil or water to the sheet.
    4. Now in a wok/ kadhaai, heat oil on medium flame. Once the oil becomes hot, start adding vadas in kadhaai (Gently turn them). Fry them till they become crisp and golden.
    5. Once the vadas are golden brown in colour from both sides, transfer them on plate or bowl. Place kitchen tissues on bowl or plate to remove extra oil.
    6. Serve hot with Imli, coriander or Coconut Chutney or Sambhar. :) :)
