    1. Wash and soak the urad dal in plenty of water at least for 4-5 hours.
    2. Drain and grind the soaked urad dal to a smooth paste/ batter using little water if required.
    3. Transfer it to a mixing bowl and add chopped onions, green chillies, ginger, cumin seeds, black peppercorns, curry leaves, coriander leaves and salt to taste. Mix well.
    4. Heat sufficient oil in a wok. Keep the flame to medium.
    5. Wet your fingers and scoop a lemon sized ball of batter. Give it a round shape and make a small hole in the centre with your thumb.
    6. Gently slide the vada into the hot oil. Slide few more vadas likewise and fry them till they turn golden and crisp from all sides. Drain them on kitchen tissue to remove excess oil.
    7. Follow the process until all the batter is used up.
    8. Serve the Medu Vada hot or warm with sambar and coconut chutney.
