Take Gatta -
Get 1 cup besan (gram flour)
Prepare to taste salt
Prepare 1/4 tsp. turmeric powder
Make ready 1 tsp. red chili powder or to taste
Make ready 1/2 tsp. coriander powder
Make ready 1/2 tsp. cumin powder
Make ready 1/4 tsp. asafoetida
Make ready 1/2 tsp. carom seeds, crushed
Get 2 tbsp. ghee
Get 1 tsp. kasuri methi, crushed (opt)
Prepare Gravy -
Make ready 1 cup yoghurt
Make ready 2 tbsp. almond paste (opt)

Make ready 1/2 tsp. garam masala powder (opt)
Prepare 1 tsp. coriander powder
Get 1 tsp. red chili powder
Take 1/2 tsp. turmeric powder
Take Tempering -
Prepare 2 tbsp. ghee
Make ready 1 whole red chili
Get 2 bay leaves
Prepare 1/2 tsp. cumin seeds
Prepare 1 tsp. garlic, chopped
Get 1 tsp. ginger, chopped
Prepare 1 onion, chopped
Take 1-2 green chilies, chopped
Prepare 1 tsp. coriander leaves, chopped to garnish
Instructions
Steps to make Gatte Ki Sabzi:
Gatte - In a bowl, mix together all the mentioned ingredients under "gatta". Add water, little at a time, and make a stiff dough.
Divide the dough into equal portions & give a long cylindrical shape.
In a kadai / pan, bring 2 & 1/2 cups of water to a boil. Drop in the gatta pieces. Simmer, covered for 4-5 minutes or till bubbles appear on them.
Drain and cut into pieces. Keep aside.
In a bowl, add all the mentioned ingredients. Whisk to a smooth consistency. Keep aside.
Heat oil & ghee in a pan. Temper with red chilli, bay leaves & cumin seeds. Add the onion, ginger, garlic & green chilies. Saute till light brown.
Add the yoghurt mix & stir continuously till the oil separates. Add the boiled gatta & the water in which it was boiled. Continue - to simmer for 2-3 minutes.
Switch off the flame & garnish with coriander leaves.
Serve with any form of rice or Indian bread.
