- Wash and pat dry the potatoes then poke using fork then drizzle oil, salt and pepper.. bake in oven at 200°c for 35min.. Then let it cool.. make 2 portions and remove the inner part of potatoes as we have to fill the potatoes and keep the excess for making filling..
- In a pan add oil let it heat then add corn and capsicum mix well add ginger garlic paste, pepper and salt mix well and cook till soft.. then switch off the gas add mayonnaise, leftover potatoes mix well and fill in the potatoes
- Then add grated cheese sprinkle salt and pepper again bake it till cheese melts for about 10min at 180° serve hot with dip or as it is..
