    2. Prepare 1/4 cup urad dal soaked for 2 hours

    6. Prepare 1/4 tsp red pepper powder
    7. Take 2 tsp clarified butter or ghee

    11. Prepare 200 grams potatoes peeled & cut into 1"
    12. Take 200 grams kumdha (yellow pumpkin) peeled & cut into 1"

    14. Take 4 cloves garlic cut into small pieces
    15. Make ready 1 medium tomato cut into small pieces

    17. Make ready 1/2 " ginger cut finely

    19. Get 1/2 tsp haldi powder

    23. Prepare 2 tsp panchphoran (methi- jeera- rai- saunf-magrella)
    24. Prepare 1/4 tsp hing powder
    25. Make ready 1/2 tsp garam masala
    26. Get to taste salt
    27. Make ready 2 & 1/2 cups water

    Instructions

    Steps to make Dal Kachori with Aloo Kumdha Sabzi:

    1. For–Dal Kachori
    2. Grind into a fine paste with chillies and ginger.
    3. Put maida in a big bowl, add ghee, red pepper, salt and mix well.
    4. Add the dal paste and knead into a semi soft dough.
    5. Sprinkle little water if required.
    6. Keep it aside for 15 minutes.
    7. Mix again lightly and make small balls.
    8. Roll the balls into thin desired Kachori size with the help of little oil.
    9. Deep fry in oil on high flame.
    10. Serve hot
    11. For Aloo Kumdha Sabzi–
    12. Heat a big kadhai & add both the oils together.
    13. Add panchforan, hing, bay leaf, whole red peppers.
    14. Add green chillies, ginger, garlic, onions, tomatoes and saute for 2 minutes
    15. Add potatoes and kumdha, saute for 2 minutes
    16. Add haldi, dhaniya powder, red pepper powder, salt and saute for another 5 minutes on high flame
    17. Add water, mix well, bring to boil & cover with a lid and cook on slow flame till the vegetables are done
    18. When cooked check the consistency of the gravy
    19. Switch off the flame. Sprinkle garam masala and cover with a lid for 5 minutes
    20. Garnish with chopped coriander
    21. Serve hot with dal kachori
