    1. Prepare 1/2 (1 kg) Brinjals round ones
    2. Prepare 10 Chillies long ones
    3. Take 2 tsp Salt
    4. Get 2 tsp Red Chilli powder
    5. Take 1 small bunch Coriander Leaves finely chopped
    6. Get 2 Sprigs Curry Leaves
    7. Get 1 tsp Cumin Seeds
    8. Get 1 tsp Mustard Seeds
    9. Make ready 1/2 tsp Fenugreek Seeds
    10. Make ready 1/2 tsp Black Seeds or Kalonji
    11. Make ready 1/2 tsp Turmeric powder
    12. Prepare FOR THE MASALA -
    13. Take 1/4 cup Peanuts
    14. Prepare 1/4 cup Sesame Seeds
    15. Prepare 1/4 cup Dry Coconut pieces
    16. Take 1 tbsp Cumin Seeds
    17. Prepare 1 tbsp Coriander Seeds
    18. Make ready 2 Onions roughly chopped
    19. Make ready 1/4 cup Tamarind soaked
    20. Prepare Eggs boiled as required
    21. Prepare 1/2 cup Oil

    Instructions

    Instructions to make Hyderabadi Baghare Baingan:

    1. Heat Oil in a cooking pot. Add Cumin, Mustard, Fenugreek and Black Seeds or Kalonji. Also add the Curry Leaves. Fry for a minute or two and then add the Ginger garlic paste. Saute for a minute more and then add the Brinjals that are cut like a + sign but not all through. They should be intact. Also add the Chillies along with their stems. Fry for about 15 minutes on a low heat until done. Cover with a lid while doing that.
    2. Dry roast all the masalas and keep aside. Shallow Fry Onions on a low heat in a tablespoon of Oil until translucent. Now grind all the masalas and the Onions. Add the rest of the powdered spices to the masalas. Mix well and add to the pot. Stir with light hands and allow to simmer on a low heat until some time before adding the Tamarind water. Adjust Salt and also the consistency of the gravy.
    3. Garnish with chopped Coriander Leaves and serve piping hot to your loved ones and friends alike at Mealtimes. Enjoy!
