    Steps to make Raw mango chutney:

    1. In a pan take a tsp of oil. Add urrad dal+ Channa dal+cumin seeds+coriander seeds+methi seeds+red chilli+hing.Sauté for a awhile until it turns aromatic
    2. Now in a mixer jar add roasted gram + raw grated mango + step 1 ingredients and grind smooth without adding water.
    3. Now in a pan take a tsp oil + mustard seeds + urrad dal + curry leaves. Once it splutters transfer blended mixture from step 2. Add salt + jaggery + pinch turmeric and mix well. Serve this with idli/dosa/rice.

    This provides little smoky, charred flavor to the chutney. Whenever I make any kind of thepla other than methi thepla, I have to make some kind of chutney to. The raw mango chutney is made by cooking grated raw mango with sugar syrup and adding a tinge of cardamom powder to make it flavourful. This delicacy can be a compliment for rice and roti.
